# What You’ll Need:

→ Proteins

01 - 4 large eggs
02 - 4 slices bacon or 4 breakfast sausages

→ Vegetables

03 - 2 medium potatoes, peeled and diced
04 - 1 small onion, finely chopped
05 - 1 small bell pepper, diced

→ Dairy

06 - 1 cup shredded cheddar cheese (100 g)
07 - 2 tablespoons milk

→ Tortillas

08 - 4 large flour tortillas (10 inches)

→ Spices & Oils

09 - 2 tablespoons vegetable oil
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - 1/4 teaspoon smoked paprika (optional)

# Steps:

01 - Cook bacon or sausages in a skillet over medium heat until browned and fully cooked. Remove and drain on paper towels. Chop into bite-sized pieces.
02 - In the same skillet, add 1 tablespoon vegetable oil. Sauté diced potatoes, onion, and bell pepper with salt, pepper, and smoked paprika until vegetables are golden and tender, approximately 10 minutes. Set aside.
03 - Whisk together eggs, milk, salt, and pepper in a bowl. Heat remaining 1 tablespoon oil in a non-stick pan over medium heat, pour in the egg mixture, and gently scramble until just set.
04 - Warm flour tortillas in a dry pan or microwave for 20 seconds to make them pliable.
05 - Distribute potatoes, scrambled eggs, chopped bacon or sausage, and shredded cheese evenly onto the center of each tortilla.
06 - Fold the sides of each tortilla inward and roll tightly to enclose the filling, forming burritos.
07 - Place burritos seam-side down in a dry skillet over medium heat. Grill for 2 minutes to crisp and seal the edges.
08 - Serve the burritos hot, optionally accompanied by salsa or hot sauce.

# Expert Advice:

01 -
  • Everything cooks in about thirty minutes, so you're not standing around waiting while your morning slips away.
  • You can eat it with your hands, which makes mornings feel less formal and more like an adventure.
  • It's endlessly customizable depending on what's actually in your kitchen that day.
02 -
  • Don't overstuff the burritos—I learned this the hard way when I watched mine burst open on the first bite, and it's genuinely disappointing.
  • If you scramble the eggs all the way to being completely set in the pan, they'll be a little bit tough; they finish setting when they hit the warm burrito, so pull them a half-second earlier than you think you should.
03 -
  • Cut your potatoes the same size so they finish cooking at the same time and nothing stays hard or gets mushy.
  • Cooking the bacon or sausage first means the skillet is already seasoned and warm for the vegetables, and nothing takes longer than you expect.
