# What You’ll Need:

→ Roasted Vegetables

01 - 1 ½ pounds carrots, peeled and chopped into 1-inch pieces
02 - 1 (15-ounce) can chickpeas, rinsed, drained, and thoroughly dried
03 - 2 tablespoons olive oil
04 - 1 teaspoon smoked paprika
05 - 1 teaspoon ground cumin
06 - ½ teaspoon garlic powder
07 - ½ teaspoon salt
08 - ¼ teaspoon black pepper

→ Creamy Tahini Dressing

09 - ¼ cup tahini
10 - 3 tablespoons freshly squeezed lemon juice
11 - 1–2 tablespoons maple syrup
12 - 1 tablespoon olive oil
13 - 3–5 tablespoons water
14 - Pinch of salt

→ For Serving

15 - Cooked quinoa or mixed greens
16 - Fresh herbs (parsley, cilantro, or dill)

# Steps:

01 - Preheat oven to 425°F. Place a large rimmed baking sheet in the oven while heating to ensure it's hot when adding vegetables.
02 - In a large bowl, combine chopped carrots and thoroughly dried chickpeas. Add olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper. Toss until evenly coated.
03 - Carefully remove the hot baking sheet from the oven. Immediately spread the seasoned carrots and chickpeas in a single, even layer. Use two sheets if crowded to ensure proper roasting.
04 - Roast for 25–30 minutes, tossing halfway through, until carrots are fork-tender and caramelized, and chickpeas are golden and crisp.
05 - While roasting, whisk together tahini, lemon juice, maple syrup, and olive oil in a small bowl. Gradually whisk in water, one tablespoon at a time, until dressing is smooth and pourable. Adjust salt, lemon, or sweetness as desired.
06 - Layer bowls with quinoa or greens if using. Top with hot roasted carrots and chickpeas, drizzle generously with tahini dressing, and garnish with fresh herbs.

# Expert Advice:

01 -
  • The way the chickpeas turn impossibly crispy, almost like croutons, while the carrots become sweet and tender
  • That creamy tahini dressing ties everything together into something that feels like comfort food but leaves you feeling light
02 -
  • The tahini dressing will look thick and curdled when you first mix the ingredients. Keep whisking and adding water, and it will suddenly transform into a smooth sauce.
  • Do not skip the step of heating your baking sheet. That initial sizzle when the vegetables hit the metal creates the caramelization that makes this dish special.
03 -
  • If your tahini dressing tastes bitter, your tahini might be old or low quality. Taste it before adding to the recipe and buy a fresh jar if needed.
  • Make a double batch of the roasted vegetables. They are excellent on their own as a snack or added to salads throughout the week.
